What is the difference between Ceylon cinnamon and cassia?

Ceylon cinnamon (Cinnamomum verum) is sometimes called true cinnamon and has a thin, multi-layered quill with a delicate sweet aroma. Cassia comes from other Cinnamomum species and is thicker and stronger in flavour.
